
My daughter and I took a trip to the grocery store, which she patiently slept through. I raided the veggie section gathering an assortment of colors to meet my needs. Rainbows aren't just beauty in the sky for our eyes. They are good for our bodies by letting us know we are getting a variety of nutrients. (This does not apply to cereal... I'm talking about vegetables.)
Last night my husband made me a big spinach salad and he cooked me some butternut squash seeds on the side. I am so lucky to have such a good husband!
This morning I made omelets with sweet peppers, artichoke hearts, and spinach. Eating well makes me feel my best and it really starts the day off right. I'm so grateful my little one slept in a bit so I could have both hands to cook. And I made extra so I can have some tomorrow too, no matter how the morning starts.
Tonight's menu is butternut squash soup! And it is a new recipe as we search for one similar to what we had on our honeymoon in Costa Rica. I can hardly wait!
I'm so grateful for delicious food. I'm grateful to enjoy the taste of food that is also good for me. I'm grateful to re-commit to my health and eating right. I'm grateful for a rainbow on my plate! And I'm grateful to start this day with the right food to fuel it.
